Cook the chicken
  1. Place the chicken in a large pot and cover with water.
  2. Add a pinch of salt and bring to the boil.
  3. Simmer until the chicken is fully cooked and tender.
Prepare the chicken
  1. Remove the chicken from the soup, cut or shred it into small pieces, and return it to the pot.
Add the vegetables
  1. Add the sliced carrots and finely chopped onions to the soup.
  2. Simmer until the vegetables are soft.
Add noodles and seasoning
  1. Stir in the noodles and cook according to the packet instructions.
  2. Add Vegeta and adjust salt to taste.
Serve
  1. Serve hot, on its own or with fresh bread.

Notes

  • For a richer broth, use chicken on the bone.
  • Add celery, parsley root, or a bay leaf for extra depth of flavour.
  • This soup is ideal for freezing without the noodles - add them fresh when reheating.
