Cook the chicken
- Place the chicken in a large pot and cover with water.
- Add a pinch of salt and bring to the boil.
- Simmer until the chicken is fully cooked and tender.
Prepare the chicken
- Remove the chicken from the soup, cut or shred it into small pieces, and return it to the pot.
Add the vegetables
- Add the sliced carrots and finely chopped onions to the soup.
- Simmer until the vegetables are soft.
Add noodles and seasoning
- Stir in the noodles and cook according to the packet instructions.
- Add Vegeta and adjust salt to taste.
Serve
- Serve hot, on its own or with fresh bread.
Notes
- For a richer broth, use chicken on the bone.
- Add celery, parsley root, or a bay leaf for extra depth of flavour.
