Instructions
Prepare the batter
- Beat the eggs and sugar together until light and well combined.
- Add the milk and oil, mixing well.
- Gradually add the flour, baking powder, and vanilla.
- Beat until a smooth, lump-free batter forms.
Make the cocoa mixture
- Pour about one-third of the batter into a separate bowl.
- Stir the cocoa into this portion until fully blended.
Layer the cake
- Grease a cake tin.
- Pour part of the plain (yellow) batter into the tin.
- Add the cocoa batter on top.
- Finish by pouring the remaining plain batter over the top to create a marbled effect.
Bake the cake
- Bake in a preheated hot oven at 180 °C.
- Bake from the bottom heat only at first until the cake rises.
- Then turn on the top heat to brown the surface.
- Total baking time: 45–60 minutes.
- Test with a skewer — it should come out clean.
Cool and serve
- Leave the cake to cool in the tin for 10–15 minutes.
- Turn out onto a wire rack and allow to cool completely before slicing.
Notes
- Adjust sugar depending on how sweet you prefer your cake.
- You can replace oil with melted butter for a richer flavour.
- Add lemon zest, orange zest, or a splash of rum for variation.
- This cake freezes well once fully cooled.
- Dust with icing sugar or drizzle with chocolate glaze before serving if desired.
