Spinach with meat

Spinach with meat is a hearty, traditional dish where tender lamb or beef simmers with wilted spinach, onions, and spices in a light tomato base. Thickened with a touch of flour, it’s flavorful, nourishing, and versatile.

Cook the meat
  1. Heat a little oil in a pot and fry the meat until browned.
  2. Transfer the meat to another pot, cover with warm water and a pinch of salt, and simmer until tender.
Cook the spinach
  1. In the same pot where the meat was browned (using the leftover fat), fry the chopped onions until soft.
  2. Add the spinach and stir until it wilts and reduces in volume.
Thicken the base
  1. Stir in the flour and mix well.
  2. Add paprika, then the tomato purée (or chopped tomatoes) dissolved in a little water.
  3. Pour in about 1 cup (250 ml) of cold water to help soften the flour mixture.
Combine and simmer
  1. Season with curry, turmeric, Vegeta, and salt.
  2. Return the cooked meat and its broth to the spinach mixture.
  3. Adjust liquid as needed.
  4. Simmer until the spinach is soft and flavors are blended.
